Zucchini Spaghetti
Zucchini Spaghetti Bolognese is a delicious and healthy twist on the classic Italian dish.
This recipe uses spiralized zucchini as a substitute for traditional pasta, making it a great low-carb option that’s packed with flavor!
Zucchini Spaghetti

Ingredients

- 4 medium zucchinis (about 1 pound)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 pound ground meat
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
- Grated Parmesan cheese for serving (optional)

Instructions

1. Prepare the Zucchini:
Using a spiralizer, create zucchini noodles (zoodles) from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set aside.
2. Cook the Vegetables:
n a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
3. Add the Meat:
Increase the heat to medium-high and add the ground meat to the skillet. Cook until browned, breaking it up with a spoon, about 5-7 minutes.
4. Add Tomatoes and Seasoning:
Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring the mixture to a simmer and reduce the heat to low. Let it simmer for about 15-20 minutes, allowing the flavors to meld.
5. Cook the Zoodles:
While the sauce is simmering, prepare the zucchini noodles. In a separate skillet, lightly sauté the zoodles over medium heat for about 2-3 minutes, just until they are slightly tender. Be careful not to overcook them; you want them to retain some crunch.
6. Combine and Serve:
Divide the zucchini noodles into bowls and top with the Bolognese sauce. Garnish with fresh basil or parsley and sprinkle with grated Parmesan cheese, if desired.
